Carrots are so rich in important minerals and vitamins that they can rightly be called a remedial food. You should eat them every day in one form or another, especially during the low-vitamin winter months and early spring. They should preferably be eaten raw, because when uncooked they retain all their goodness.
Children like to nibble carrots as if they were sticks of rock or candy. So when mother puts them on the table cut up into four pieces, maybe grandmother would not be so pleased with her meal, but this is perfect for the children since their teeth are given a little extra work to do. I remember the time when carrot salad used to mean a dish of cooked carrots, sliced and dressed. However, since the importance of their vitamins has become common knowledge, boiled or cooked carrots are hardly ever served as a salad, instead, grated raw carrots have taken their place. With a little grated horseradish added they taste exceptionally refreshing.
